Ingredients
-2 cups of milk. I used 2%.
-2 tlbs unsalted butter
-2 yolks
-1 egg
-1 cup fine sugar
-1/2 tsp kosher salt
-1 cup flour, I used bread flour.
-1 tsp vanilla
-Orange peel or lemon peel. I used orange zest being that you strain later.
-1/4 cup rum. Accompanying Mojito optional being that the rum is out.
Method
-Heat milk & butter until fully incorporated. Low heat. Don’t get crazy.
-In a bowl mix eggs, sugar, salt and stir with a spatula.
-Add flour and mix.
-Incorporate milk mixture slowly into the egg/flour mix. Too fast and you’ll cook the eggs. No bueno. GO SLOW, Team.
-Add vanilla, rum and orange peel.
-Cover and refrigerate for 24 hours.
-Remove from frig and strain.
-Rub butter in molds with paper towel and fill 3/4.
-Bake 475 for 10 min. Reduce heat to 350 for 60 min. Take a peek every 15 min towards the end. Watch the color/heat.
-Remove from oven & eat!!! After cooling of course…
-Note: I think that silicone molds might be better. FYI.
